If you’re like me, nothing puts you in the holiday spirit like eggnog and baking. For the perfect combination of the two, try this easy recipe. 

Ingredients (yields 12 servings):

  • 6 egg yolks
  • 6 egg whites
  • 2 cups heavy cream
  • 3 cups milk
  • 1 cup cane sugar
  • ¼ teaspoon salt 
  • 1 teaspoon cinnamon
  • 1 teaspoon nutmeg
  • 1 tablespoon vanilla

 

Kitchen utensils:

  • Saucepan
  • Whisk 

 

Assembly: 

Using two bowls, separate your yolks into a large bowl and reserve the whites in a smaller bowl for later. Mix the egg yolks, salt and sugar vigorously in the bigger bowl until they are completely smooth and light in color. Next, add in milk and heavy cream, whisking both until they are completely incorporated. 

Set your saucepan on low heat and pour your mixture into a saucepan. Add in the cinnamon, nutmeg and vanilla, whisking gently without incorporating air for about 10 minutes. 

Returning to the egg whites, whisk until stiff peaks form. Make sure to flip your whisk over and see if the egg whites mixture will stand up to double check. Gently fold the egg whites into the base until no large pieces of egg whites remain and the mixture becomes light and fluffy.

Garnish with cinnamon and nutmeg. Enjoy this holiday treat.
